Turmeric Turkey Quinoa Meatballs

Guys, these past few weeks have been rough. I’ve been focused on healing my body and getting help from my gastroenterologist for pancreatitis. It’s still a work in progress, but woah, we have come far already. Following excruciating pains after eating for days in a row I made an appointment with my doctor. A few tests later I was on a 2 day liquid diet and then low-fat super bland diet from then on until I’m totally healed.

Not sure if you have ever tried a liquid diet, but it was NOT fun. I went from hungry to forcing myself to eat broth and jello every few hours, paired with headaches and fatigue. Transitioning back to solids was equally as hard. It took days for my body to get used to eating rice, boiled chicken, baked potatoes, and bananas again.

Finally, this weekend I was feeling much better and able to try some new foods. I still have to keep it super low-fat for now and be careful with what I eat, but I am so happy to be able to have some fun with food again!

The first thing I thought of making for this week’s meal prep is my Turmeric Turkey Quinoa Meatballs! They are so delicious and easy to prep and then throw into salads throughout the week, paired with a soup, or paired with a side of veggies. They’re versatile and go with a variety of sauces, but are also super healthy and packed with protein.

Honestly, I can’t believe I have forgotten about these and haven’t made them in months! They’re such an easy go-to, and aren’t complicated to make at all. I hope you enjoy them!

Turmeric Turkey Quinoa Meatballs

Prep time: 30 mins Cook time: 30 mins

Makes 20-25 Meatballs


  • 2 cups uncooked quinoa
  • 4 cups water
  • 1 lb ground turkey
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp dried parsley
  • 1 tbsp ground dried turmeric
  • 1 tsp ground ginger
  • 2 tsp Himalayan pink salt
  • 2 tsp black pepper, ground


1. In a rice cooker, put uncooked quinoa and water in and cook.

2. Once the quinoa is cooked, move into a large bowl and mix to release some steam.

3. Add all spices and mix until well combined. Your quinoa will turn yellow.

4. Add ground turkey and mix thoroughly.

5. Form meatballs and place on a foil lined baking sheet lined sprayed with cooking oil spray.

6. Bake at 400 degrees for 30 minutes. After the first 20 minutes, turn the meatballs and put back in oven for the last 10 minutes.
